Mediterranean Shrimp and Orzo Salad

I made this dish last summer and really loved it- I figured it was time to make it again since the weather was so warm over the weekend. 

I used a Barefoot Contessa Recipe with a few variations

Ingredients:
Kosher salt
Extra virgin olive oil
3/4 pound (12 oz) orzo
1/2 cup fresh lemon juice (3 lemons)
1 pound shrimp, peeled and deveined
1/2 red onion, minced
1 cucumber, unpeeled and diced
10 oz package grape tomatoes, halfed
8 oz feta, crumbled
1 cup flat leaf parsley
1 tbsp dill (recipe calls for 1 cup of fresh dill but I forgot it - the dried stuff works even though fresh would be better)


Fill large pot with water, add 1 tbsp salt and a splash of oil, and bring water to boil. Add the orzo and simmer for 9-11 minutes, stirring occasionally, until it's al dente. Drain and pour into a large bowl.

Whisk together the lemon juice and 1/4 cup olive oil (*original recipe calls for 1/2 cup oil), and 2 tsp salt and 1 tsp pepper. Pour over the hot pasta and stir well.  
Place the shrimp on a sheet pan, drizzle with olive oil, and sprinkle with S&P. Toss to combine and spread out in a single layer. Roast for 5 minutes, until the shrimp are cooked through (the original recipe calls for 2 lbs and to be cooked for 5-6 minutes - I cooked my 1 pound for about 5 minutes and think I overcooked it a little). Add shrimp to hot past and stir in.



Add onions, cucumber, tomatoes, parsley, dill, feta, S&P. Toss well. 
Set aside at room temperature for 1 hour to allow the flavors to blend, or refrigerate overnight. The original recipe recommends to taste again for seasoning and bring back to room temperature before serving.

Hardware and Sanding

Today I took the hardware off the drawers and began sanding. The finish on this thing is THICK! Every so often it gets gummed up under the sander. I love my little Black & Decker hand sander. It uses velcro to hold on the sand paper and is really easy to handle.

Seth pointed out a few more things in our apt. I forgot to post about! Here are some great thrift store and flea market finds as well as some of Seth's creations...

We saw a piece of art just like this at Pier 1, but if you have ever been there you know its CRAZY overpriced. So for Christmas I bought Seth canvas and pain and he painted one of his own.

We saw a clock like this at Target but it was near $100...so Seth made one with his stepdad's help.

We found this little stand while we were in college - I want to paint it or stain it but Seth won't let me. 

We found this great big bottle in New Hope, NJ. We are using it for our Honey Moon Fund :)

This dresser was on Craigslist for about $100.  I think its called tiger wood? It has a beautiful striped grain. Seth's stepdad had to repair the majority of the drawer bottoms, but the rest is in good shape. It still has working locks on each of the drawers and I love the curved legs.

We found this shutter outside Peddler's Village, PA. It was less than $10. We threw a little sealant over it and are now using it for mail.


My parents were given this trunk as a wedding gift. It was sitting in our basement for many years. Once I was in college I convinced my mother to let me pull it out, clean it and paint the inside. We are using it now as a coffee table.

Found this suitcase at Phantastic Phinds in Philly. Not sure what I will do with it yet. I saw a fun idea on Pinterest where someone made a pet bed out of one.

This is the dresser I am hoping to put a wash on.

And of course, since he wiggles his way into every aspect of my day...including studying...here is Henry!

Past Projects

Summer seems to be the time of year when Seth and I undergo the most DIY projects. So, in hopes that we will be completing a few this summer, I figured I would post on our past projects first!



    
Some are small and some are more substantial - we had fun doing them regardless of their scale.

Found this old smoker's table at a shop in Jim Thorpe, PA. It was painted white with sky blue inner panels and was chipping like crazy. The hinge on the door was also broken.  This was after it had been sanded and painter's tape laid on.

We found a card catalog at our favorite vintage revival store on Main Street. I found table legs on Etsy and Seth secured a piece of wood to the bottom and the legs onto the wood with some brackets from Lowes. And voila! Card catalogue side table.

My family's Sweet Potato Pie on Thanksgiving

Made a terrarium and placed tiny kitty figurines Seth's mom had given us in it.

Hanging succulent garden. We are having a hard time keeping them grounded in the pots so we have them stabilized with string right now.





Our first big purchase together - a popup camper!!! We have spent the past two weekends stripping and replacing the caulking. Updating and checking the electrical work, and cleaning it inside and out. Excited to eventually USE IT!

  
One of my favorite vases was looking a little tired...so we made it into a lamp! All we needed was a bottle lamp kit, a ceramic cutting drill bit, and a little hot glue!
My newest project. I saw this dresser at one of the thrift/revival shops in town - it was pricey but I loved the colors and wash. I found a gorgeous dresser at the Salvation Army and waited until the price was reduced to buy it. I am hoping to put a nice wash on it and restain the wood like the dresser above.
